About Us
“The devils are already approaching, their long beards made of horsehair and tail, hang and move to the beat of the music… Their deer horns and their long ears warn that they are not of this world, they are the deceased, the ancestors What do they return to in All Saints season? Espadin joven
This name was given to it because of the thin and long leaves that resemble swords.
The largest volume of mezcal production in the country corresponds to the maguey espadín, due to its high reproductive properties, sugars, weight and volume. The reproduction process of agaves occurs in two ways: by inflorescence and by shoots that are usually genetically homogeneous.

Coyote
This variety is endemic to the state of Oaxaca and is distinguished by its black spines; among the poblaicones it has the name of sierra negra or arroqueño. Its aroma is intense but smooth on the palate. On the palate it is herbal and persistent.
This maguey reaches a height between 2 and 2.5 m. tall, it is distinguished by its grayish-white leaves with strong teeth on the margin and a robust terminal spine. At the base of adult plants, shoots are born around them. The inflorescence or quiote, reaches 6-8 m. tall and has numerous branches with green-yellowish flowers.

Cuishe
Agave species karwinskii, characteristic for looking like a "maguey tree". It has green-yellow leaves with black spines. In the valleys of Oaxaca it takes between 9 and 11 years to mature.
It is one of the subspecies of the karwinskii species that has a lot of morphological diversity, which is why different names have been given to it, such as madrecuish, barrel or cirial. The aromatic notes of the mezcal cuish are mineral and herbal, with a slight smell of pennyroyal. On the palate it is citrusy, smoky and mineral.

This maguey is the least frequently used for the preparation of mezcal due to the rarity of its species.
The Agave Convallis, needs at least 12 years of maturation to be able to be used in the production of mezcal, its process has a certain degree of complexity because, after being roasted, the wild boar usually fluffs up and expands, due to the large amount of chemical compounds that it produces naturally, causing some.
